Description

We're enjoying a quiet evening at home, the first weekend in a while where we haven't been running around like the proverbial headless chickens. I spent some time in the garden today where I discovered some of the radishes I planted were ready to harvest, so I brought some home. I also poked around in the kitchen for food that needed to be eaten soon, and found some week-old raw crimini mushrooms, cooked white rice from Chinese last night, Granny Smith apples that are too tart to eat on their own, and the little packet of bacon I thawed last night.  A quick trip to the store yielded me the rest of the ingredients I needed for the following:

--Sandwiches on fresh Ciabatta bread, with bacon, cheddar cheese, sliced Granny Smith apple, and a drizzle of honey right on the apple, tucked into the toaster oven for a few minutes to melt the cheese

--A radish salad as per this recipe: seattletimes.com/html/pacificn… - with some chopped apple added in as well

--Sliced mushrooms and sweet onion sauteed in the bacon grease and some butter, then mixed with the rice and sauteed a bit more, then served with raw crushed walnuts on top

It was incredibly good. We've been so busy with vending and other stuff lately that I haven't had as much time to cook as I would like, and I sometimes forget how *good* food can be. Restaurants are nice at the end of a long day of vending, but there's something about making the food by hand (and even using ingredients I grew) that has no comparison, even if it's relatively humble fare compared to filet mignon and lobster.

Tomorrow: I have plans for the leftover sesame beef and a bunch of spinach...

I can't wait to start growing my own food again; I miss eating cherry tomatoes fresh from the garden. T_T  I plan to research what herbs I can grow indoors, but I don't know about veggies or fruits.
